Our cheeses are the result of an exhaustive and thorough selection amongst the wide variety elaborated by our cheese masters in La Mancha. All cheeses, of extraordinary quality, have been handmade with Manchego sheep milk. ANCHA Castilla offers:
Semi-cured Artisan Cheese PDO (+2 months of curing)
Made with raw sheep milk, with a mild flavour, delicate cream colour and firm consistence. Ideal for mild flavour lovers. Its curing period ranges between two and six months.
Semi-cured Cheese PDO, MINI format (at least 45 days of curing)
Delicious semi-cured cheese, with a mild flavour and delicate texture, made with pasteurised milk from Manchego sheep. It needs a curing period of at least forty five days.
Cured Artisan Cheese PDO (+ 6 months of curing)
Made with raw sheep milk, with intense smell and flavour and important firmness in mouth. Excellent for lovers of consistent cheeses and unique tastes. Its curing takes approximately six months.
Viejo Artisan Cheese (+ 12 months of curing)
Made with raw sheep milk, its flavour is slightly sharp, strong and tasty. It may be slightly spicy in the case of cheeses with a long curing period. Appreciated by whoever enjoys persistent and pungent flavours. Its curing usually exceeds twelve months.

Exclusively made with raw milk from Manchego sheep, bred and fed following the parameters of ecological agriculture and livestock breeding.
Artisan cheese in extra virgin olive oil
Semi-cured sheep cheese, submerged during at least six months in extra virgin olive oil. This gives it a peculiar flavour; tasty, intense but delicate at the same time, it is a delight within our range of varieties.
Castilla la Mancha produces white, red, rosé and sparkling wines.
White wine is made with grapes of the varieties Airén, Padilla, Viura, Chardonnay and Sauvignon blanca, whilst the varieties Cencibel or Tempranillo, Garnacha, Cabernet Sauvignon, Moravia and Merlot are used for red wine.
The name depends on the ageing. Thus, a Nuevo wine is a wine that has been bottled nine months after its production. The name Cosecha is applied to the wine produced during the year indicated on the label. Crianza, Reserva and Gran Reserva, distinguish those wines submitted to a certain ageing process.
We call pairing to the process of matching food with the appropriate wine to enhance the pleasure of eating. This concept lies in the fact that certain elements, such as the texture and flavour of food and wine react when they are mixed together. Finding the appropriate combination of the latter makes eating an extremely pleasant experience for our palate.
*Crianza Selección Wine, after 18 months in barrel and 24 months in bottle rack, we can present an elegant wine, appropriate for the most demanding palates. With great intensity, with a large potential of careful ageing. Alcohol percentage: 14% vol.
*Joven Wine, made with grapes of Tempranillo variety. Despite its young age, it has its own personality due to the grape selection process and its subsequent fermentation. Cherry coloured with purple tones, red fruit aroma. It is powerful and fleshy. Alcohol percentage: 13.5% vol.
Extra Virgin Olive Oil
We can see it is an authentic Olive Juice, with extraordinary properties. It is characterised by an acidity equal to or below 0.8º and its superior quality, without flaws.
It is a food product recommended and classified as healthy for the heart by the World Health Organisation. Therefore, it is ideal for dressing, as well as for cooking or frying.
It has a fine, mild taste, and depending on the variety, it is more or less fruity. This variety depends on the type of olives used in the production: arbequina, picual, hojiblanca, cornicabra…
It is delicious raw, used as a dressing for salads, to make sauces or just spread on a slice of good bread…
At ANCHA Castilla, we offer two varieties:
*Cornicabra. Extra Virgin Oil with Denomination of Origin Montes de Toledo.
*Coupage. Extra Virgin Oil, from two olive varieties, Cornicabra and Picual.
Honey is a sweet food product, produced by bees from the nectar of flowers. It has recognised therapeutic qualities, including the fact that it helps to heal and it prevents infections.
Important source of energy, honey does not expire, because due to its high concentration of sugars it kills the bacteria by means of osmotic lysis. It is highly appreciated in cooking, especially in baking, and even in patent beauty recipes.
Its texture is dense, mild, aromatic and surrounding. It is usually tasted spread on bread, as a sweetener for infusions, milk, juices, yoghurts, milk curd, as a special ingredient in different baker recipes…
ANCHA Castilla offers the following varieties:
*Orange Blossom Variety, made with orange blossoms. With a mild scent and flavour, it has slight relaxing effects.
*Forest Variety, made with Eucalyptus, Chestnuts, Lavender, Rosemary… Rich in minerals, with intense flavour and slightly salty touches, as well as a pleasant aroma.
*Rosemary Variety, made with Rosemary flowers. Aromatic and sweet honey, with mild tonic effects.
Spice original from Arabia, it comes from a plant called Crocus Sativus, belonging to the Liliaceae order, of the Iridaceae family. Its purple colour flower produces three reddish orange stigmas. This stigma, which once dried and toasted exudes an intense fragrance and great colouring power, is what we really know as saffron.
In cooking it is highly appreciated when used for colouring, aromatising and flavouring many dishes. It reaches its greatest exponent when used in the elaboration of rice, roasted meats, fish, soups, sea food...
Obtained from Iberian pigs, bred in Dehesas in Extremadura and fed exclusively with acorns in montanera, unique specimens that give the best they have got to produce:
Iberian Bellota Ham. With a unique and special taste, its thin and aromatic fat melts on the palate, allowing you to taste a ham with intense flavour and full of hints.
Iberian Bellota Paleta. From the back legs of the Iberian pig we obtain these extraordinary Paletas, with firm meat and delicate flavour, which are delicious to taste.
Iberian Bellota Chorizo. Stuffed in natural-case tripe and handmade. We present an ideal chorizo for aperitifs, it is tasty at any time of the day.
Iberian Bellota Salchichón. Delicious Iberian Salchichón, handmade with the best spices, which enhance its extraordinary flavour.
Iberian Bellota Lomo. Extraordinary to taste as an aperitif, with an optimal curing point, which gives it a unique flavour.

Pastas Toledanas. Delicious pastries made from lard filled with very fine pumpkin jam, a pleasure to end any type of meal.
Marzipan Delights. Delicious figures made with marzipan pastry, moulded by hand, one by one, in a totally traditional and artisan manner.
Almond Pastries. Portions of almond pastry, especially juicy, crowned with a whole almond.
Yolk Pasties. A very special sweet, consisting in a pastry of rich marzipan filled with yolk cream confit.
